Ingredients
Scale
- 1/2 cup unsalted butter, melted
- 1/2 cup unsweetened cocoa powder
- 1/4 cup hot water or brewed coffee
- 2 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup full-fat Greek yogurt
- 1/4 cup unsweetened applesauce
- 1/2 cup all-purpose flour
- 1/2 cup whey protein powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, whisk melted butter, cocoa powder, and hot water or coffee until smooth to bloom the cocoa.
- In a large bowl, whisk eggs, sugar, and vanilla until light and fluffy (about 2 minutes).
- Add the cocoa mixture to the egg mixture and mix until just combined.
- In a separate bowl, whisk flour, protein powder, baking powder, and salt.
- Add dry ingredients to wet ingredients in batches, mixing gently until combined.
- Fold in chocolate chips evenly.
- Pour batter into prepared pan and spread evenly.
- Bake for 20–25 minutes until a toothpick shows moist crumbs.
- Cool completely before slicing into brownies.
Notes
- Blooming cocoa enhances deep chocolate flavor—don’t skip it.
- Avoid overmixing to keep brownies soft and fudgy.
- Do not overbake; protein powder dries them out quickly.
- Let brownies cool fully before cutting for best texture.
- Store in airtight container for 3–4 days or freeze up to 3 months.
