- 1 lb ground beef (or ground turkey or plant-based crumbles)
- 4 medium red potatoes (or riced cauliflower for low-carb)
- 1 medium onion, diced
- 1 cup shredded cheese (Colby Jack or pepper jack)
- 1/2 cup mayo or Greek yogurt
- 1/4 cup ketchup (low-sugar preferred)
- 1 tbsp Dijon mustard
- 1 tbsp Cajun seasoning
- 1 cup pickles or cucumbers
- 2 cups lettuce (any leafy greens)
- Olive oil, salt, and pepper to taste
Instructions
- Dice the potatoes into small pieces, toss with olive oil, salt, and pepper, then air fry at 400°F (200°C) for 16–18 minutes until crispy.
- In a skillet over medium heat, sauté diced onions in olive oil for 10–15 minutes until caramelized.
- Increase heat to medium-high, add ground beef, smash and cook for 5–7 minutes until browned. Drain excess fat and season.
- In a bowl, whisk together mayo, ketchup, mustard, and Cajun seasoning until smooth.
- Assemble bowls: add potatoes (or cauliflower), top with beef, onions, shredded cheese, and drizzle with sauce.
- Finish with pickles and lettuce, then serve immediately.
Notes
- Swap potatoes with cauliflower rice for a lower-carb option.
- Use Greek yogurt instead of mayo for a lighter sauce.
