  • 1/2 cup mayo or Greek yogurt
  • 1/4 cup ketchup (low-sugar preferred)
  • 1 tbsp Dijon mustard
  • 1 tbsp Cajun seasoning
  • 1 cup pickles or cucumbers
  • 2 cups lettuce (any leafy greens)
  • Olive oil, salt, and pepper to taste

Instructions

  1. Dice the potatoes into small pieces, toss with olive oil, salt, and pepper, then air fry at 400°F (200°C) for 16–18 minutes until crispy.
  2. In a skillet over medium heat, sauté diced onions in olive oil for 10–15 minutes until caramelized.
  3. Increase heat to medium-high, add ground beef, smash and cook for 5–7 minutes until browned. Drain excess fat and season.
  4. In a bowl, whisk together mayo, ketchup, mustard, and Cajun seasoning until smooth.
  5. Assemble bowls: add potatoes (or cauliflower), top with beef, onions, shredded cheese, and drizzle with sauce.
  6. Finish with pickles and lettuce, then serve immediately.
