Ingredients
- 2 pounds boneless skinless chicken breasts cut into cubes
- 1 cup Greek yogurt
- 3 tablespoons olive oil
- 3 tablespoons fresh lemon juice

- 1 cucumber grated

- 4 pita breads warmed
- 2 cups cooked rice or salad for serving
- Fresh parsley for garnish
- Lemon wedges for serving
Instructions
- In a large bowl, combine Greek yogurt, olive oil, lemon juice, garlic, paprika, cumin, oregano, salt, and black pepper until smooth.
- Add the chicken cubes to the marinade and toss until fully coated. Cover and refrigerate for at least 30 minutes.
- If using wooden skewers, soak them in water for 20 minutes to prevent burning.
- Thread the marinated chicken pieces onto the skewers, leaving small spaces between each piece.
- In a separate bowl, prepare the yogurt sauce by mixing Greek yogurt, grated cucumber, mint, lemon juice, garlic, salt, and black pepper.
- Preheat a grill, grill pan, or skillet over medium-high heat and lightly oil the surface.
- Cook the skewers for several minutes per side, rotating occasionally until the chicken is fully cooked and lightly charred.
- Remove the skewers from the heat and allow them to rest for a few minutes before serving.
- Serve the chicken skewers with warm pita bread, rice, salad, and yogurt sauce.
- Garnish with fresh parsley, mint, and lemon wedges before serving.
Notes
- Marinating the chicken longer creates deeper flavor and more tender texture.
- Avoid overcrowding the skewers so the chicken cooks evenly and develops a beautiful char.
- Fresh lemon juice and fresh herbs provide the brightest Mediterranean flavor.
