- 7 to 8 cups seedless watermelon, cut into 3/4-inch cubes
- 1 1/2 cups fresh blueberries
- 1 cup crumbled feta cheese
- Fresh mint leaves, thinly sliced
- Fresh basil leaves, thinly sliced
- Juice of 1 1/2 limes
- 1 tbsp extra virgin olive oil
- 1 to 2 tbsp honey, to taste
- Pinch of salt
Instructions
- In a mason jar, combine lime juice, olive oil, honey, and a pinch of salt.
- Shake vigorously until the dressing is well combined.
- In a large serving bowl, combine watermelon cubes, blueberries, sliced mint, sliced basil, and 3/4 cup of the feta cheese.
- Pour the honey lime dressing over the salad.
- Toss gently until everything is evenly coated.
- Top with the remaining feta cheese.
- Garnish with additional mint and basil leaves if desired.
- Serve immediately and enjoy.
