- 2 medium sweet potatoes
- 1 pound lean ground beef
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 cup cottage cheese
- 1/4 cup hot honey
- 1 avocado, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash, peel, and dice sweet potatoes into cubes. Toss with olive oil, salt, and pepper.
- Spread the sweet potatoes on a lined baking sheet and roast for 25 minutes until tender and caramelized.
- In a large skillet, heat olive oil over medium heat. Sauté chopped onion until translucent, then add minced garlic.
- Add ground beef to the skillet and cook until browned. Season with salt and pepper.
- Combine honey with cayenne or chili flakes in a small bowl for the hot honey drizzle.
- Assemble bowls by layering roasted sweet potatoes, cooked beef, cottage cheese, avocado slices, and drizzle generously with hot honey.
- Serve immediately and enjoy.

- Add black beans for extra protein and fiber.
- Swap ground turkey for a leaner alternative.
- Adjust spice level by adding more or less chili flakes.
