  • 1 cup pecans
  • 2 tbsp brown sugar
  • 6 oz spinach leaves
  • 1 1/2 cups strawberries, stems removed
  • 1/4 cup goat cheese (or feta cheese)
  • balsamic vinaigrette dressing

Instructions

  1. Melt butter in a small skillet over medium heat. Add pecans and brown sugar, stirring to coat.
  2. Cook for about 3 minutes until sugar caramelizes. Transfer pecans to wax paper to cool.
  3. In a large bowl, layer spinach, strawberries, cheese, and cooled pecans.
  4. Add dressing just before serving and toss lightly. Serve immediately.

Notes

  • Do not add dressing until ready to serve to keep the salad fresh.
