- 2 tbsp butter
- 1 cup pecans
- 2 tbsp brown sugar
- 6 oz spinach leaves
- 1 1/2 cups strawberries, stems removed
- 1/4 cup goat cheese (or feta cheese)
- balsamic vinaigrette dressing
Instructions
- Melt butter in a small skillet over medium heat. Add pecans and brown sugar, stirring to coat.
- Cook for about 3 minutes until sugar caramelizes. Transfer pecans to wax paper to cool.
- In a large bowl, layer spinach, strawberries, cheese, and cooled pecans.
- Add dressing just before serving and toss lightly. Serve immediately.
Notes
- Do not add dressing until ready to serve to keep the salad fresh.
- Feta cheese can be used instead of goat cheese.
