Instructions
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, combine ground beef, ground lamb, breadcrumbs, egg, garlic, onion, parsley, paprika, Italian seasoning, salt, and pepper.
- Mix gently until fully combined and shape into medium-sized meatballs.
- Place meatballs on a parchment-lined baking tray.
- In another bowl, toss baby potatoes with olive oil, garlic powder, rosemary, salt, pepper, and Parmesan cheese.
- Spread potatoes around the meatballs on the baking tray.
- Bake for 30-35 minutes, turning potatoes halfway through cooking for even crispiness.
- Check that meatballs are fully cooked and golden brown.
- Garnish with fresh parsley and serve hot.
Notes
- For extra crispy potatoes, broil during the last 2 minutes of cooking.
- You can substitute ground turkey or chicken for a lighter option.
- Serve with a side salad or garlic yogurt sauce for extra flavor.
