- 8 oz (225g) noodles (spaghetti, rice noodles, or lo mein)
- 2 cups cooked shredded chicken
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce or tamari
- 2 tablespoons honey or brown sugar
- 2 tablespoons lime juice or rice vinegar
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 – 1/2 cup warm water to thin sauce
- Optional toppings:
- 2 tablespoons chopped peanuts
- 2 green onions, sliced
- 1/4 cup fresh cilantro
- 1 teaspoon chili flakes or chili oil
Instructions
- Bring a pot of salted water to a boil and cook noodles according to package instructions. Drain and set aside.
- In a medium bowl, whisk together peanut butter, soy sauce, honey, lime juice, sesame oil, garlic, and ginger.
- Gradually add warm water, whisking until the sauce becomes smooth and pourable.
- Warm the shredded chicken in a skillet over medium heat or microwave until heated through.
- Add cooked noodles to a large bowl and pour the peanut sauce over them. Toss until evenly coated.
- Stir in the shredded chicken and mix well.
- Adjust seasoning if needed, adding more soy sauce, lime juice, or spice.
- Garnish with toppings like peanuts, green onions, cilantro, or chili flakes. Serve immediately.
Notes
- You can use rotisserie chicken for a faster prep.
- Adjust spice level by adding chili oil or flakes.
- Store leftovers in the fridge for up to 3 days; add a splash of water when reheating.
