- For the Pudding
- 4 egg yolks
- 4.25 oz sugar
- 3.5 tbsp cornstarch
- 3.5 cups milk
- 3 tsp vanilla
- 1/4 teaspoon fine sea salt
- For the Peach Layer
- 2.2 lb peaches (peeled and sliced into 1/2-inch thick wedges)
- 3.5 oz brown sugar
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp fresh lemon juice
- For the Topping and Assembly
- 2.5 cups cream (chilled)
- 1.5 tbsp icing sugar
- 8.8 oz biscuits (roughly crushed into chunks)
Instructions
- In a saucepan over medium heat, combine the peeled and sliced peaches with the brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5-10 minutes, stirring occasionally, until the peaches are softened and release their juices, creating a syrupy filling. Transfer to a bowl and let cool completely.
- In a medium bowl, whisk together the egg yolks and sugar until pale and slightly thickened. In a separate bowl, whisk the cornstarch into the milk until fully dissolved, then slowly whisk it into the egg mixture. Pour into a saucepan and cook over medium heat, stirring constantly for 10-12 minutes until thickened. Remove from heat and stir in the vanilla and salt.
- Transfer the custard to a bowl and chill in the refrigerator for 2-3 hours until completely cold.
- Pour the chilled cream into a cold bowl and whip until soft peaks form. Gradually add the icing sugar and continue whipping until stiff peaks form. Roughly crush the biscuits into chunky crumbs.
- In a 9×13 inch baking dish, layer half of the crushed biscuits on the bottom. Spread half of the chilled custard over the biscuits, then add half of the peach filling. Repeat with the remaining biscuits, custard, and peaches. Top evenly with the whipped cream.
- Cover and refrigerate the assembled peach cobbler pudding for at least 1 hour before serving. Serve chilled.
Notes
- For the best texture, chill the custard completely before assembling the dessert.
- You can use graham crackers or vanilla wafers instead of biscuits.
- Fresh ripe peaches provide the best flavor, but canned peaches can work in a pinch.
- This dessert tastes even better after sitting overnight in the refrigerator.
