- 3/4 cup (168g) unsalted butter, room temperature
- 3/4 cup (108g) brown sugar
- 1/4 cup (52g) sugar
- 1 egg
- 2 tsp vanilla extract
- 2 cups (260g) all purpose flour
- 1 tsp baking soda
- 1 tsp cornstarch
- 1/2 tsp salt
- 3/4 cup (125g) semi-sweet chocolate chips
- 3/4 cup (146g) chopped M&Ms
- 2–3 tbsp red, white and blue sprinkles
- 1/2 cup (112g) salted butter
- 1/2 cup (95g) shortening
- 4 cups (460g) powdered sugar
- 1 1/2 tsp vanilla extract
- 2–3 tbsp water or milk
- Red gel icing color
- Additional sprinkles for decoration
Instructions
- Preheat oven to 350°F (176°C) and spray a cupcake pan with non-stick cooking spray.
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 3–4 minutes.
- Mix in the egg and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking soda, cornstarch, and salt. Add to the wet ingredients and mix until a dough forms.
- Fold in the chocolate chips, chopped M&Ms, and patriotic sprinkles.
- Form balls using about 2 tablespoons of dough each. Press dough into the bottom and partway up the sides of each cupcake cavity to create a cup shape.
- Bake for 10–12 minutes until the edges are lightly golden.
- Cool mostly in the pan before transferring to a wire rack. If needed, press the centers down gently with the back of a tablespoon while still warm.
- For the frosting, beat together butter and shortening until smooth.
- Add half of the powdered sugar and mix until smooth.
- Mix in vanilla extract and 1–2 tablespoons of water or milk.
- Add remaining powdered sugar and mix until smooth, adding additional liquid if needed.
- Divide frosting into two bowls and color one red with gel icing color.
- Place each frosting color into separate piping bags, then insert both into a larger piping bag fitted with a decorating tip.
- Pipe frosting into cooled cookie cups and decorate with patriotic sprinkles.

- Use room-temperature ingredients for the best cookie texture.
- Do not overbake to keep the cookie cups soft.
