  • 3/4 cup (168g) unsalted butter, room temperature
  • 3/4 cup (108g) brown sugar
  • 1/4 cup (52g) sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups (260g) all purpose flour
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • 1/2 tsp salt
  • 3/4 cup (125g) semi-sweet chocolate chips
  • 3/4 cup (146g) chopped M&Ms
  • 23 tbsp red, white and blue sprinkles
  • 1/2 cup (112g) salted butter
  • 1/2 cup (95g) shortening
  • 4 cups (460g) powdered sugar
  • 1 1/2 tsp vanilla extract
  • 23 tbsp water or milk
  • Red gel icing color
  • Additional sprinkles for decoration

Instructions

  1. Preheat oven to 350°F (176°C) and spray a cupcake pan with non-stick cooking spray.
  2. Cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 3–4 minutes.
  3. Mix in the egg and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking soda, cornstarch, and salt. Add to the wet ingredients and mix until a dough forms.
  5. Fold in the chocolate chips, chopped M&Ms, and patriotic sprinkles.
  6. Form balls using about 2 tablespoons of dough each. Press dough into the bottom and partway up the sides of each cupcake cavity to create a cup shape.
  7. Bake for 10–12 minutes until the edges are lightly golden.
  8. Cool mostly in the pan before transferring to a wire rack. If needed, press the centers down gently with the back of a tablespoon while still warm.
  9. For the frosting, beat together butter and shortening until smooth.
  10. Add half of the powdered sugar and mix until smooth.
  11. Mix in vanilla extract and 1–2 tablespoons of water or milk.
  12. Add remaining powdered sugar and mix until smooth, adding additional liquid if needed.
  13. Divide frosting into two bowls and color one red with gel icing color.
  14. Place each frosting color into separate piping bags, then insert both into a larger piping bag fitted with a decorating tip.
  15. Pipe frosting into cooled cookie cups and decorate with patriotic sprinkles.
