- 1½ lb chicken breast (about 3–4 pieces), approx. 1 inch thick
- 2 Tbsp olive oil
- 2 garlic cloves, minced
- ⅓ cup grated parmesan
- ⅓ cup breadcrumbs
- ½ tsp cracked pepper
- ½–¾ tsp sea salt
- 2 lb red potatoes, cut into bite-sized pieces
- 2–3 garlic cloves, minced (divided)
- 2 Tbsp olive oil
- 2 Tbsp grated parmesan
- 1 lb fresh green beans, trimmed
- 1 Tbsp olive oil
Instructions
- Preheat oven to 425°F (220°C) and line a sheet pan with parchment or grease it lightly.
- Toss potatoes with olive oil, garlic, parmesan, salt, and pepper. Spread on one third of the pan and bake for 10–15 minutes.
- Meanwhile, mix chicken with olive oil, garlic, parmesan, breadcrumbs, salt, and pepper until well coated.
- Remove pan, add chicken, then toss green beans with olive oil, garlic, salt, and pepper and add them to the pan.
- Return to oven and bake for about 25 minutes, or until chicken reaches 165°F (74°C).
- Optional: Broil for 4–5 minutes for extra crispy potatoes and chicken crust.
- Let rest a few minutes before serving.
