  • lb chicken breast (about 34 pieces), approx. 1 inch thick
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs
  • ½ tsp cracked pepper
  • ½¾ tsp sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 23 garlic cloves, minced (divided)
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • 1 lb fresh green beans, trimmed
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 425°F (220°C) and line a sheet pan with parchment or grease it lightly.
  2. Toss potatoes with olive oil, garlic, parmesan, salt, and pepper. Spread on one third of the pan and bake for 10–15 minutes.
  3. Meanwhile, mix chicken with olive oil, garlic, parmesan, breadcrumbs, salt, and pepper until well coated.
  4. Remove pan, add chicken, then toss green beans with olive oil, garlic, salt, and pepper and add them to the pan.
  5. Return to oven and bake for about 25 minutes, or until chicken reaches 165°F (74°C).
  6. Optional: Broil for 4–5 minutes for extra crispy potatoes and chicken crust.
  7. Let rest a few minutes before serving.
