- 2 cups graham cracker crumbs
- 1 stick butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 12 oz Cool Whip, thawed and divided
- 2 (3 oz) packages Jell-O Orange Jelly Powder
- 1/3 cup boiling water
- 2 (3.4 oz) packages Jell-O vanilla instant pudding mix
- 2 1/2 cups cold milk
- 1/2 cup canned mandarin orange segments, drained
Instructions
- In a medium bowl, combine graham cracker crumbs and melted butter until evenly moistened.
- Press the mixture firmly into the bottom of a 9 x 13-inch glass or porcelain baking dish. Freeze for 10–15 minutes to set.
- In a small bowl, whisk together the orange gelatin powder and boiling water until completely dissolved.
- In a large bowl, prepare the vanilla pudding according to package directions using the cold milk. Stir in the dissolved orange gelatin mixture and let stand for 5 minutes, stirring occasionally.
- In another large bowl, beat the softened cream cheese and powdered sugar until smooth. Fold in 2 cups of the whipped topping.
- Spread the cream cheese mixture evenly over the chilled crust.
- Pour the orange pudding mixture over the cream cheese layer and spread evenly.
- Top with the remaining whipped topping and carefully spread into an even layer.
- Refrigerate for at least 2 hours, preferably overnight.
- Before serving, sprinkle drained mandarin orange segments over the top.
- Cover and refrigerate leftovers.
