  • 12 oz Cool Whip, thawed and divided
  • 2 (3 oz) packages Jell-O Orange Jelly Powder
  • 1/3 cup boiling water
  • 2 (3.4 oz) packages Jell-O vanilla instant pudding mix
  • 2 1/2 cups cold milk
  • 1/2 cup canned mandarin orange segments, drained

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter until evenly moistened.
  2. Press the mixture firmly into the bottom of a 9 x 13-inch glass or porcelain baking dish. Freeze for 10–15 minutes to set.
  3. In a small bowl, whisk together the orange gelatin powder and boiling water until completely dissolved.
  4. In a large bowl, prepare the vanilla pudding according to package directions using the cold milk. Stir in the dissolved orange gelatin mixture and let stand for 5 minutes, stirring occasionally.
  5. In another large bowl, beat the softened cream cheese and powdered sugar until smooth. Fold in 2 cups of the whipped topping.
  6. Spread the cream cheese mixture evenly over the chilled crust.
  7. Pour the orange pudding mixture over the cream cheese layer and spread evenly.
  8. Top with the remaining whipped topping and carefully spread into an even layer.
  9. Refrigerate for at least 2 hours, preferably overnight.
  10. Before serving, sprinkle drained mandarin orange segments over the top.
  11. Cover and refrigerate leftovers.
