Ingredients

  • 1 ball pizza dough
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 5 oz fresh mozzarella
  • 1 tablespoon lemon juice
  • 2 tablespoon grated parmesan cheese
  • 1 tablespoon fresh parsley
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven and prepare pizza dough according to instructions.
  2. If using fresh mozzarella, slice and pat dry.
  3. Stretch dough on parchment into a 9×13 inch shape.
  4. Mix olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper until emulsified.
  5. Dimple the dough and spread the mixture evenly over it.
  6. Add mozzarella cheese evenly.
  7. Transfer to preheated oven or pizza stone and bake for 8–10 minutes until golden.
  8. Top with lemon juice, parmesan, parsley, and black pepper. Slice and serve immediately.

Notes

  • A baking sheet can substitute for a pizza stone.
  • Store leftovers in the refrigerator for up to 1 day or freeze for up to 3 months.
