Ingredients

  • 4 chicken thighs, boneless and skinless
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 mango, diced
  • 2 cups cabbage, shredded
  • 1 red bell pepper, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub the chicken thighs with jerk seasoning and olive oil.
  3. Grill the chicken for 6–7 minutes on each side or until fully cooked.
  4. In a large bowl, combine mango, cabbage, red bell pepper, and cilantro.
  5. In a separate bowl, whisk together mayonnaise, honey, lime juice, salt, and pepper.
  6. Pour dressing over the slaw and toss to combine.
  7. Slice the cooked chicken and serve over the mango slaw.
  8. Drizzle with extra honey lime cream if desired.

Notes

  • Add more jerk seasoning for extra spice.
  • Can be served warm or cold.
  • Store leftovers in the refrigerator for up to 2 days.
