  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups corn flakes, finely crushed
  • 2 tablespoons olive oil
  • 8 oz feta cheese, crumbled
  • 1/4 cup honey
  • 12 tablespoons sriracha or hot sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a wire rack.
  2. Whisk honey, sriracha, apple cider vinegar, and red pepper flakes in a bowl. Set aside.
  3. Mix garlic powder, onion powder, smoked paprika, oregano, black pepper, cayenne, and salt.
  4. Season chicken evenly with spice mix.
  5. Prepare three bowls: flour mixed with half seasoning, beaten eggs, and cornflakes mixed with remaining seasoning.
  6. Dredge chicken in flour, dip in egg, then coat in cornflakes, pressing firmly.
  7. Place on baking sheet, drizzle lightly with olive oil, and bake for 15 minutes.
  8. Remove, top with feta, and bake another 10 minutes until cooked through and golden.
  9. Drizzle hot honey sauce over chicken and serve immediately.
