- 1 lb boneless skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups corn flakes, finely crushed
- 2 tablespoons olive oil
- 8 oz feta cheese, crumbled
- 1/4 cup honey
- 1–2 tablespoons sriracha or hot sauce
- 1 teaspoon apple cider vinegar
- 1 teaspoon crushed red pepper flakes
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a wire rack.
- Whisk honey, sriracha, apple cider vinegar, and red pepper flakes in a bowl. Set aside.
- Mix garlic powder, onion powder, smoked paprika, oregano, black pepper, cayenne, and salt.
- Season chicken evenly with spice mix.
- Prepare three bowls: flour mixed with half seasoning, beaten eggs, and cornflakes mixed with remaining seasoning.
- Dredge chicken in flour, dip in egg, then coat in cornflakes, pressing firmly.
- Place on baking sheet, drizzle lightly with olive oil, and bake for 15 minutes.
- Remove, top with feta, and bake another 10 minutes until cooked through and golden.
- Drizzle hot honey sauce over chicken and serve immediately.

- Use a wire rack for extra crispiness.
- Adjust sriracha to control heat level.
- Don’t skip pressing cornflakes firmly for best crunch.
