- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 pound green beans, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper, to taste
Instructions
- Whisk honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper in a bowl.
- Marinate chicken for at least 30 minutes (or up to 8 hours).
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, and pepper on a baking sheet.
- Roast sweet potatoes for 15 minutes.
- Push sweet potatoes aside and add chicken and green beans to the pan.
- Drizzle remaining marinade over everything.
- Bake for 20–25 minutes until chicken reaches 165°F and vegetables are tender.
Notes
- Serve with rice or a green salad for a complete meal.
- Store leftovers in an airtight container for up to 4 days in the fridge.
- Marinating longer improves flavor intensity.
