- 1 ½ lbs boneless, skinless chicken breasts, sliced into strips
- 1 cup long-grain white rice
- 2 cups chicken broth
- ¾ cup BBQ sauce
- ¼ cup brown sugar
- 2 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
- 6 tbsp unsalted butter, divided
- 8 garlic cloves, minced
- 1 cup corn kernels
- 1 ½ cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup shredded Monterey Jack cheese
- 4 oz cream cheese, softened
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp salt
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- 2 green onions, sliced
Instructions
- In a saucepan, melt 2 tbsp butter and sauté half the garlic for 1 minute.
- Add rice and toast for 2 minutes.
- Pour in chicken broth, bring to a boil, then reduce heat. Cover and simmer for 18 minutes.
- Stir in cream cheese, corn, and cheddar until melted and stretching.
- Stir in mozzarella and Monterey Jack until gooey and glossy.
- Season chicken strips with smoked paprika, garlic powder, and salt.
- Heat olive oil and 2 tbsp butter in a skillet over medium-high heat.
- Sear chicken for 4-5 minutes per side until golden with dark seared edges.
- In a small bowl, whisk BBQ sauce, brown sugar, vinegar, and Worcestershire sauce.
- Pour sauce over chicken and simmer for 3 minutes until sticky and glossy.
- Add remaining 2 tbsp butter and remaining garlic to the BBQ chicken, tossing until smoky and coated.
- Plate cheesy rice and pile heavily with sticky honey BBQ chicken.
- Garnish with parsley and green onions before serving.

- Use freshly shredded cheese for the smoothest melted texture.
- Add diced jalapeños for a spicy kick.
- This dish pairs well with roasted vegetables or a crisp green salad.
