- 1.5 lbs chicken thighs
- 2 tbsp olive oil
- 1.5 cups long-grain white rice
- 3 cups chicken broth or water
- 1 cup barbecue sauce
- 1/2 cup honey
- 1 medium onion, chopped
- 3 cloves garlic, minced
Instructions
- Mix barbecue sauce with honey in a small bowl and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken thighs and sear 3–4 minutes per side until golden brown.
- Remove chicken and sauté onion and garlic for 2–3 minutes.
- Add rice and toast for 1 minute.
- Pour in chicken broth, return chicken to skillet, and drizzle honey BBQ sauce over everything.
- Bring to a boil, cover, reduce heat, and simmer 18–20 minutes until rice is tender.
- Remove from heat and let rest for 5 minutes.
- Garnish with parsley before serving.

- Ensure chicken is fully thawed before cooking.
- Adjust BBQ sauce sweetness to taste.
