- For the chicken and sauce
- 1.5 lb chicken breast, cut into 1-inch chunks
- 1 tbsp garlic, minced
- 1 tbsp ginger, grated
- 1/4 cup honey
- 2 tbsp brown sugar
- 1/3 cup soy sauce
- 1 tbsp sesame oil
- 2 tbsp rice vinegar
- 1/2 tsp red pepper flakes (optional)
- For the glaze
- 2 tbsp water
- 3 tbsp cornstarch
- For toppings
- 1 tbsp sesame seeds
- 3 tbsp green onions, sliced
Instructions
- Cut chicken into even 1-inch chunks.
- Whisk soy sauce, honey, brown sugar, sesame oil, rice vinegar, garlic, ginger, and optional red pepper flakes.
- Place chicken in crockpot and pour sauce over it. Stir to coat.
- Cook on high for 3 hours or low for 5–6 hours until tender.
- Remove chicken and transfer sauce to a saucepan.
- Mix cornstarch with water to form slurry, whisk into simmering sauce until thickened.
- Return chicken to sauce and coat well.
- Garnish with sesame seeds and green onions before serving.
Notes
- Low heat cooking gives juicier chicken and deeper flavor.
- Fresh ginger and garlic significantly improve taste.
- Simmer sauce until glossy for best texture.
