This Hobo Casserole Ground Beef is a hearty, comforting baked dish made with layers of seasoned ground beef, tender potatoes, and melted cheese. It’s an easy family dinner that’s simple to prepare and full of rich, savory flavor.

  • Total Time: 1 hour 5 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 5–7 minutes. Drain excess fat if needed.
  3. Add chopped onion and garlic to the beef and cook for 3–4 minutes until softened.
  4. Spread the beef mixture evenly in the bottom of the baking dish.
  5. Layer thinly sliced potatoes over the beef and season with salt, pepper, Italian seasoning, and paprika.
  6. Sprinkle cheddar and Parmesan cheese evenly over the top.
  7. Pour beef broth (or water) around the edges. Optionally drizzle milk for extra creaminess.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake another 15–20 minutes, until potatoes are tender and cheese is golden and bubbly.
  10. Garnish with parsley and serve warm.

Notes

  • Make sure to brown the beef well and drain excess fat for a cleaner flavor.
  • Slice potatoes evenly so they cook at the same rate.
  • Let the casserole rest a few minutes before serving for easier slicing.
  • Add vegetables like carrots or peas for extra nutrition.
