- 4 boneless skinless chicken breasts
- 1 pound baby potatoes, halved
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Pat chicken breasts dry and season generously with salt and black pepper.
- In a large bowl, toss halved baby potatoes with olive oil, thyme, and rosemary until evenly coated.
- Place the seasoned potatoes at the bottom of the slow cooker.
- Scatter chopped onion and minced garlic over the potatoes.
- Lay the seasoned chicken breasts on top of the potato layer.
- Pour chicken broth evenly over everything in the slow cooker.
- Sprinkle additional thyme and rosemary over the chicken.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken is tender and fully cooked.
Notes
- Add carrots or green beans during the last 2 hours of cooking for extra vegetables.
- Squeeze fresh lemon juice over the dish before serving to brighten the flavors.
