- For the Chicken Marinade:
- 1 1/4 lb chicken breasts
- 1/4 cup olive oil
- 2 tablespoons honey
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons dried basil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- For the Bowl:
- 4 cups romaine lettuce, shredded
- 2 cups cherry tomatoes, halved
- 2 cups cucumber, diced
- 2 cups cooked white rice
- 1 cup red onion, sliced
- 1/2 cup feta cheese (optional)
- For Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cup grated cucumber
- 1 tablespoon fresh dill
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon garlic, minced
- 1/4 teaspoon salt
Instructions
- Whisk together all marinade ingredients and coat the chicken.
- Marinate for at least 30 minutes or up to a few hours.
- Mix all tzatziki sauce ingredients and set aside.
- Prepare rice and chop vegetables.
- Cook chicken in air fryer at 380°F for 10–11 minutes, flipping halfway, or cook in a skillet until internal temperature reaches 165°F.
- Let chicken rest for 5 minutes, then slice.
- Assemble bowls with rice, veggies, chicken, and tzatziki sauce.
- Optional: drizzle with olive oil and lemon juice before serving.

- Marinate longer for deeper flavor.
- Can be cooked in air fryer or skillet.
