- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup shredded cheese
- 1/4 cup chopped smoked beef
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Cooking spray or vegetable oil
Instructions
- Preheat oven to 350°F (175°C).
- Grease a 12-cup muffin tin with cooking spray or oil.
- Whisk cottage cheese, eggs, shredded cheese, smoked beef, salt, garlic powder, and onion powder until smooth.
- Divide mixture evenly into muffin cups, filling three-quarters full.
- Bake for 20–25 minutes until set and lightly golden.
- Cool briefly, then remove and serve.
Notes
- Store in the refrigerator for up to 3 days.
- Reheat in microwave for 30–45 seconds or in a 300°F oven for 5 minutes.
- Can be frozen for up to 2 months and reheated from frozen for about 8 minutes.
