Instructions
- Wash and slice the cucumber into thin rounds and place in a large bowl.
- Rinse, hull, and slice the strawberries; add to the bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- Pour the dressing over the cucumber and strawberries and toss gently.
- Add fresh mint and toss again.
- Let the salad sit for 5–10 minutes before serving to enhance flavors.
