  • 15 ounce can artichoke hearts, drained and chopped
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 cup chopped fresh spinach, packed
  • 2 pounds boneless, skinless chicken breasts (34 breasts, lightly pounded)
  • 1 cup freshly grated mozzarella cheese

Instructions

  1. Preheat oven to 375°F. Grease a 9×13-inch baking dish and set aside.
  2. In a medium bowl, combine artichokes, spinach, Parmesan cheese, mayonnaise, and garlic powder.
  3. Place the chicken in the baking dish and spread the mixture evenly on top. Sprinkle mozzarella cheese over the top.
  4. Cover with foil and bake for 20–30 minutes until chicken reaches at least 155°F.
  5. Uncover, switch to broil, and cook an additional 5–10 minutes until cheese is browned and chicken is cooked through.
  6. Let rest for 5 minutes before serving.

Notes

  • Use fresh mozzarella for best melting results.
  • You can omit spinach if preferred.
  • If internal temperature is below 160°F, continue baking (not broiling) a few more minutes.
