- Sauce:
- 1 ¾ cups chicken broth
- ¼ cup heavy cream
- 1 teaspoon Worcestershire sauce
- 1 teaspoon mustard powder
- 1 teaspoon honey
- ½ chicken bouillon cube
- ½ teaspoon each: onion powder, oregano, basil, parsley
- Chicken/Other:
- 2 large boneless skinless chicken breasts
- Salt and pepper to taste
- 2 teaspoons parsley
- 1–2 tablespoons olive oil
- ¾ cup dry white wine
- 4 cloves garlic, minced
- 3 tablespoons butter
- 3 tablespoons flour
- ½ cup freshly grated Parmesan cheese
- 1 tablespoon fresh lemon juice
Instructions
- Combine the sauce ingredients in a measuring cup with a spout and set aside. Measure remaining ingredients.
- Slice chicken lengthwise into thinner pieces. Cover and pound to ½ inch thickness.
- Season chicken with salt, pepper, and parsley.
- Heat olive oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden. Set aside.
- Turn off heat, add wine, then set to medium. Scrape skillet and reduce for 2 minutes.
- Add garlic and cook 2–3 minutes until reduced by half.
- Add butter and flour, stir and cook 1–2 minutes.
- Add sauce mixture gradually while stirring. Bring to boil, then simmer 8 minutes.
- Reduce heat to low, add Parmesan cheese gradually, then stir in lemon juice.
- Return chicken and spoon sauce over. Heat 5 minutes until desired thickness. Garnish and serve.
Notes
- Grate Parmesan from a block for best melting and flavor.
- Use Pinot Grigio, Chardonnay, or Sauvignon Blanc, or substitute with chicken broth.
- Use a wide skillet for proper sauce reduction.
- Optional: add a few drops of Gravy Master for darker color.
- Can be adapted with pork chops or made into pasta.
- Store refrigerated up to 3 days or freeze up to 3 months.
