Ingredients

  • Sauce:
  • 1 ¾ cups chicken broth
  • ¼ cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard powder
  • 1 teaspoon honey
  • ½ chicken bouillon cube
  • ½ teaspoon each: onion powder, oregano, basil, parsley
  • Chicken/Other:
  • 2 large boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 teaspoons parsley
  • 12 tablespoons olive oil
  • ¾ cup dry white wine
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons flour
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice

Instructions

  1. Combine the sauce ingredients in a measuring cup with a spout and set aside. Measure remaining ingredients.
  2. Slice chicken lengthwise into thinner pieces. Cover and pound to ½ inch thickness.
  3. Season chicken with salt, pepper, and parsley.
  4. Heat olive oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden. Set aside.
  5. Turn off heat, add wine, then set to medium. Scrape skillet and reduce for 2 minutes.
  6. Add garlic and cook 2–3 minutes until reduced by half.
  7. Add butter and flour, stir and cook 1–2 minutes.
  8. Add sauce mixture gradually while stirring. Bring to boil, then simmer 8 minutes.
  9. Reduce heat to low, add Parmesan cheese gradually, then stir in lemon juice.
  10. Return chicken and spoon sauce over. Heat 5 minutes until desired thickness. Garnish and serve.

Notes

  • Grate Parmesan from a block for best melting and flavor.
  • Use Pinot Grigio, Chardonnay, or Sauvignon Blanc, or substitute with chicken broth.
  • Use a wide skillet for proper sauce reduction.
  • Optional: add a few drops of Gravy Master for darker color.
