- 2 cups cooked chicken, shredded
- 3 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cream cheese, softened
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh basil for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, zucchini, tomatoes, mozzarella, cream cheese, garlic powder, Italian seasoning, salt, and pepper.
- Lightly grease a 9×13 baking dish with olive oil.
- Spread mixture evenly into the dish.
- Top with Parmesan cheese.
- Bake 25–30 minutes until zucchini is tender and cheese is golden and bubbly.
- Let cool slightly and garnish with basil before serving.
Notes
- Stores well in the fridge for up to 3 days.
- Add red pepper flakes for heat.
- You can mix in other vegetables like mushrooms or spinach.
