- 2 cups cooked pasta (rotini or penne)
- 2 cups cooked chicken breast, diced or shredded
- 2 cups romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved (optional)
- 1/3 cup grated Parmesan cheese
- 1/2 cup Caesar dressing
- 1/2 cup croutons, roughly crushed
- Salt and pepper to taste
- Fresh parsley or basil for garnish (optional)
Instructions
- Cook pasta according to package instructions until al dente. Drain and rinse under cold water, then set aside.
- In a large bowl, combine cooled pasta, cooked chicken, romaine lettuce, and cherry tomatoes if using.
- Add Caesar dressing and toss gently until evenly coated.
- Stir in Parmesan cheese and season with salt and pepper to taste.
- Just before serving, top with crushed croutons.
- Garnish with fresh parsley or basil if desired and serve immediately or chill briefly.
Notes
- Keep dressing separate if preparing ahead to avoid soggy salad.
- Add croutons just before serving for maximum crunch.
- Leftovers are best eaten within 24 hours.
- Swap chicken with chickpeas or grilled vegetables for a vegetarian version.
