Ingredients

  • 1 pound chicken breasts cut into 1×1-inch cubes
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 ½ cups white long grain rice rinsed
  • 2 cups chicken stock
  • 2 cups water
  • 3 cups broccoli florets roughly chopped
  • ½ cup milk
  • 2 cups sharp cheddar cheese shredded, divided

Instructions

  1. Cut the chicken breasts into 1×1-inch cubes. Season with salt and pepper and mix it up.
  2. Preheat the pan to medium/high heat and add olive oil.
  3. When the oil is hot, add the chicken and brown it on all sides for about 5-7 minutes.
  4. Transfer the browned chicken to a plate and set aside.
  5. Add chopped onion and cook it for about 5 minutes, until it gets soft and translucent. Add minced garlic and stir for about 30 seconds to release the aroma.
  6. Add the browned chicken back to the pot.
  7. Add rinsed rice, chicken stock, and water. Mix everything and bring it to boil. Then lower the heat to low and cover with the lid.
  8. After 10 minutes, add chopped broccoli and stir. Cover with the lid again and cook until the rice is fully cooked, stirring occasionally.
  9. Preheat the oven to 425°F.
  10. When the rice is cooked, add milk and stir. Then add 1 cup of shredded sharp cheddar and fold it in.
  11. Sprinkle the rest of the cheese on top and transfer the pan to the oven for about 10-15 minutes or until the cheese is melted and bubbling.

Notes

  • Use a heavy-bottom pan that is oven-safe to prevent burning.
  • Brown the chicken in batches for better color and flavor.
  • Frozen broccoli should be thawed for 20–30 minutes before adding.
  • You can make this casserole ahead of time and bake later.
  • Long grain white rice like Basmati works best.
  • Store leftovers in an airtight container in the fridge for up to 2 days.
