Instructions
- Wash and dry the blueberries and mixed salad greens.
- Slice the peaches into thin wedges.
- Toast and chop the walnuts if using.
- In a large bowl, combine the salad greens, blueberries, and peach slices.
- Crumble the feta cheese over the salad and add walnuts if using.
- In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or chill for 30 minutes before serving.
