  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced apples
  • Apple Cider Glaze:
  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat oven to 400°F and grease a baking sheet.
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, whisk melted butter and sugar, then add egg, vanilla, and applesauce until smooth.
  4. Combine wet and dry ingredients, then fold in diced apples.
  5. Scoop tablespoon portions onto baking sheet.
  6. Bake for 10 minutes, then switch oven to broil.
  7. Whisk glaze ingredients until smooth.
  8. Brush glaze over warm bites and broil 2–4 minutes until bubbly.
  9. Remove and brush remaining glaze over tops.
  10. Let sit 15 minutes before serving.
