  • 1 cup cremini mushrooms, halved or quartered
  • 1/2 cup thinly sliced carrots
  • 1 small zucchini, sliced
  • 1 small red bell pepper, diced
  • 1 small-medium red onion, diced
  • 2 teaspoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 tablespoon grated parmesan cheese (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat air fryer for 5 minutes on highest temperature setting.
  2. Combine vegetables with olive oil, balsamic vinegar, garlic, Italian seasoning, garlic powder, salt, and pepper.
  3. Place vegetables in hot air fryer basket (cook in batches if needed).
  4. Air fry at 390°F for 7–8 minutes.
  5. Shake basket and sprinkle vegetables with parmesan cheese.
  6. Air fry for an additional 3–8 minutes until tender to your liking.
