- 3 very ripe bananas
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs, lightly beaten
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 1 cup walnuts, toasted and chopped
- 1/2 cup raisins
Instructions
- Preheat oven to 350°F and grease a loaf pan.
- Toast walnuts in a skillet, chop, and let cool.
- Cream together butter and sugar in a bowl.
- Mash bananas and mix into the batter with eggs.
- In another bowl, whisk flour, baking soda, and salt, then add to the mixture.
- Add vanilla, walnuts, and raisins, then mix well.
- Pour batter into prepared loaf pan.
- Bake for 55–60 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before transferring to a rack.
Notes
- Use overripe bananas for best flavor and moisture.
- You can substitute sugar with honey if desired.
- Store covered at room temperature for a few days or refrigerate.
