- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- ½ cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Wash and halve baby potatoes; mince garlic.
- Rub chicken breasts with olive oil, Italian seasoning, salt, and black pepper.
- Place potatoes at the bottom of the crockpot, then add chicken on top.
- Pour chicken broth over everything and sprinkle garlic and Parmesan cheese on top.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and fully cooked (165°F internal temperature).
Notes
- Do not lift the lid frequently while cooking to maintain heat.
- For extra flavor, sear chicken before adding to crockpot.
- Can be finished with fresh parsley or extra Parmesan before serving.
