- 4 chicken breasts, pounded to an even 1-inch thickness
- 1/2 cup olive oil
- 1/2 cup ranch dressing
- 3 tbsp Worcestershire sauce
- 1 tsp vinegar
- 2 tsp lemon juice
- 1 1/2 tbsp garlic, minced
- 3/4 tsp freshly cracked black pepper
- 1/3 cup ranch dressing
- 1/2 cup parmesan cheese, finely grated
- 1 cup provolone cheese, shredded thinly
- 3/4 cup panko breadcrumbs
- 1/2 cup parmesan cheese, shredded
- 1 tsp garlic salt
- 1/2 tsp smoked paprika
- 1 tbsp fresh parsley, finely chopped
- 3 tbsp unsalted butter, melted
Instructions
- In a bowl, whisk together olive oil, 1/2 cup ranch dressing, Worcestershire sauce, vinegar, lemon juice, garlic, and black pepper.
- Place chicken breasts in a shallow dish or zip-top bag and pour marinade over them. Refrigerate for 2 to 3 hours.
- In a small bowl, mix 1/3 cup ranch dressing with 1/2 cup finely grated parmesan cheese to create the ranch spread.
- In another bowl, combine panko breadcrumbs, garlic salt, shredded parmesan cheese, smoked paprika, parsley, and melted butter until evenly coated.
- Preheat grill to medium-high heat (375–400°F).
- Remove chicken from marinade and grill for 12–15 minutes, turning halfway through, until lightly charred and nearly cooked through.
- Preheat oven broiler.
- Transfer chicken to a broiler-safe baking dish.
- Spread approximately 2 tablespoons of ranch-Parmesan mixture over each chicken breast.
- Top each piece with provolone cheese.
- Divide breadcrumb topping evenly over the chicken and gently press into place.
- Broil for 3–5 minutes until cheese is melted and the topping is golden brown.
- Serve immediately while hot and crispy.
Notes
- Marinating for the full 3 hours produces the most flavorful and tender chicken.
- Watch closely while broiling to prevent the topping from burning.
- Serve with mashed potatoes, rice, or steamed vegetables.
- Freshly grated Parmesan delivers the best flavor and texture.
