- 5 cups baby spinach (or mixed greens)
- 1 cup pomegranate seeds
- ½ cup crumbled feta cheese
- 1/3 cup toasted pecans
- 1 apple, thinly sliced
- ¼ red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Set aside.
- In a large salad bowl, combine spinach, pomegranate seeds, apple slices, red onion, and toasted pecans.
- Crumble feta cheese over the top.
- Drizzle with dressing just before serving and toss gently.
