Ingredients

  • 5 cups baby spinach (or mixed greens)
  • 1 cup pomegranate seeds
  • ½ cup crumbled feta cheese
  • 1/3 cup toasted pecans
  • 1 apple, thinly sliced
  • ¼ red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Set aside.
  2. In a large salad bowl, combine spinach, pomegranate seeds, apple slices, red onion, and toasted pecans.
  3. Crumble feta cheese over the top.
  4. Drizzle with dressing just before serving and toss gently.
