Ingredients

  • 2 cups mixed nuts (almonds, cashews, pecans)
  • 1 cup pumpkin seeds (pepitas)
  • ½ cup sunflower seeds
  • 1 cup dried cranberries
  • ½ cup dried cherries
  • ¾ cup dark chocolate chips or chunks
  • 2 tablespoons coconut oil
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • 1 teaspoon cinnamon
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)

Instructions

  1. Preheat oven to 300°F (150°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together melted coconut oil, maple syrup, vanilla extract, cinnamon, smoked paprika, and cayenne pepper.
  3. Add mixed nuts, pumpkin seeds, and sunflower seeds to the coating mixture. Toss thoroughly until well coated.
  4. Spread mixture evenly on the baking sheet and roast for 20-25 minutes, stirring every 8 minutes.
  5. Remove from oven, sprinkle with sea salt, and fold in dried cranberries, dried cherries, and dark chocolate chips.
  6. Let cool completely on the baking sheet for 20 minutes before serving.
