- 2 cups mixed nuts (almonds, cashews, pecans)
- 1 cup pumpkin seeds (pepitas)
- ½ cup sunflower seeds
- 1 cup dried cranberries
- ½ cup dried cherries
- ¾ cup dark chocolate chips or chunks
- 2 tablespoons coconut oil
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon sea salt
- 1 teaspoon cinnamon
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper (optional)
Instructions
- Preheat oven to 300°F (150°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, whisk together melted coconut oil, maple syrup, vanilla extract, cinnamon, smoked paprika, and cayenne pepper.
- Add mixed nuts, pumpkin seeds, and sunflower seeds to the coating mixture. Toss thoroughly until well coated.
- Spread mixture evenly on the baking sheet and roast for 20-25 minutes, stirring every 8 minutes.
- Remove from oven, sprinkle with sea salt, and fold in dried cranberries, dried cherries, and dark chocolate chips.
- Let cool completely on the baking sheet for 20 minutes before serving.
