  • 6 boneless skinless chicken breasts (11.5 lbs total)
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 12 slices Swiss cheese
  • 1 10.5 oz can condensed cream of chicken soup
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 8 oz package seasoned stuffing mix (like Stovetop chicken flavor)
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Instructions

  1. Preheat oven to 350°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a mixing bowl, combine the condensed cream of chicken soup, chicken broth, and minced garlic. Whisk until smooth.
  3. Season both sides of chicken breasts with Parmesan, salt, and pepper.
  4. Arrange chicken in prepared baking dish. Top each breast with 2 slices of Swiss cheese.
  5. Pour cream of chicken soup mixture evenly over chicken and cheese. Spread with a spatula.
  6. Sprinkle stuffing mix evenly over chicken and sauce.
  7. Drizzle melted butter over stuffing.
  8. Cover dish with foil. Bake 40 minutes.
  9. Remove foil and bake 15-20 minutes more until stuffing is golden and chicken reaches 165°F internal temperature.
  10. Rest 5 minutes before serving. Garnish with parsley if desired.
