- 1 lb (450g) sirloin steak, cut into 1-inch pieces
- 1 tsp garlic powder
- 1 tsp instant beef stock (optional)
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp olive oil
- 6 cloves garlic, peeled and crushed
- 1/2 tsp salt
- 2 + 2 tbsp clarified butter or ghee
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped chives
- 1 1/2 lb (600g) potatoes, peeled and rinsed
- 1/4–1/2 cup milk (dairy or non-dairy)
- 1/2 tsp ground black pepper
- 1/2 lb (125g) snow peas (optional)
Instructions
- Dry rub steak with garlic powder, salt, pepper, and optional beef stock.
- Boil potatoes until tender, ~20 minutes.
- Quickly boil snow peas 2 minutes and cool in ice water, optional.
- Mash potatoes; warm milk and butter, then incorporate into mash. Season with salt and pepper.
- Heat oil in skillet; cook garlic 1 minute. Add steak bites, sear each side 3–4 minutes.
- Deglaze with 1/4 cup water or broth, add butter/ghee, stir to coat steak. Adjust seasoning.
- Serve steak bites over mashed potatoes, garnish with parsley and chives.

- Optional snow peas add color and crunch.
