Ingredients

  • 810 oz baby spinach
  • 1 ½ fuji apple, sliced
  • ½ red onion, thinly sliced
  • 2 cups pomegranate seeds
  • ½ cup feta cheese
  • ½ cup candied pecans
  • 3/4 cup olive oil
  • ½ cup balsamic vinegar
  • 2 tsp honey
  • Salt & pepper to taste

Instructions

  1. Combine olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl and whisk until homogenized.
  2. Slice red onion and apple.
  3. Arrange arugula, spinach, apple, red onion, pomegranate seeds, feta, and candied pecans in a large bowl.
  4. Drizzle with balsamic vinaigrette and gently mix.
