- 5 oz arugula
- 8–10 oz baby spinach
- 1 ½ fuji apple, sliced
- ½ red onion, thinly sliced
- 2 cups pomegranate seeds
- ½ cup feta cheese
- ½ cup candied pecans
- 3/4 cup olive oil
- ½ cup balsamic vinegar
- 2 tsp honey
- Salt & pepper to taste
Instructions
- Combine olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl and whisk until homogenized.
- Slice red onion and apple.
- Arrange arugula, spinach, apple, red onion, pomegranate seeds, feta, and candied pecans in a large bowl.
- Drizzle with balsamic vinaigrette and gently mix.
- Serve fresh and enjoy.
