- 1 lb ground beef (80/20)
- Salt and black pepper to taste
- 4 slices American cheese
- 1 cup mayonnaise
- 1/4 cup sweet pickle relish
- 2 tbsp yellow mustard
- 1 tsp white vinegar
- 1 1/4 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/8 tsp white pepper (optional)
- 4 medium flour tortillas
- 1/2 cup shredded iceberg lettuce
- 1/4 cup finely diced white onion
- Dill pickle slices
- Optional: sesame seeds for garnish
Instructions
- Whisk together mayo, sweet pickle relish, mustard, vinegar, paprika, onion powder, and garlic powder. Refrigerate 20 minutes.
- Heat a skillet and lightly char the flour tortillas on each side. Set aside.
- Divide ground beef into 4 balls. Heat cast iron skillet or griddle over medium-high heat.
- Place a beef ball on the skillet and press firmly to 1/4 inch thick. Sprinkle with salt and pepper. Cook 2 minutes.
- Flip patty and top with American cheese. Cook 1–2 minutes until edges are crispy and cheese melted.
- Assemble tacos: spread Big Mac sauce on tortilla, add lettuce, diced onion, pickles, and cheesy smashburger patty. Fold and serve warm.
Notes
- Smash burgers quickly to achieve crispy caramelized crust; avoid pressing again while cooking.
- Keep tortillas lightly charred and slightly cooled for easier assembly.
- Add lettuce and pickles just before serving to keep them crisp.
