Ingredients

  • 1 1/2 pounds ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 5 large potatoes, peeled and chunked
  • 1 can (10.75 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Brown ground beef with onion, garlic, and bell pepper until meat is cooked and vegetables are tender. Drain fat.
  2. Combine cream of mushroom soup, milk, salt, pepper, and paprika in a bowl.
  3. Layer half the potatoes in the slow cooker, top with half the meat mixture and half the soup mixture. Repeat layers.
  4. Cover and cook on low 5-6 hours until potatoes are tender.
  5. Add cheese on top, cook covered 20 more minutes until melted. Garnish with parsley.

Notes

  • Can use ground turkey or chicken instead of beef.
  • Add extra vegetables like corn or carrots if desired.
  • Top with crushed tortilla chips for crunch.
