  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup beef broth
  • 4 cups frozen tater tots

Instructions

  1. Brown ground beef in a skillet over medium heat until fully cooked. Drain excess fat.
  2. In a slow cooker, combine cooked beef, black beans, corn, diced tomatoes, taco seasoning, onion, bell pepper, and beef broth. Stir to combine.
  3. Top mixture with frozen tater tots and sprinkle with cheddar cheese.
  4. Cover and cook on low 6-8 hours or high 3-4 hours.
  5. Serve hot and enjoy!
