- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 cup diced onion
- 1 cup diced bell pepper
- 1 cup beef broth
- 4 cups frozen tater tots
Instructions
- Brown ground beef in a skillet over medium heat until fully cooked. Drain excess fat.
- In a slow cooker, combine cooked beef, black beans, corn, diced tomatoes, taco seasoning, onion, bell pepper, and beef broth. Stir to combine.
- Top mixture with frozen tater tots and sprinkle with cheddar cheese.
- Cover and cook on low 6-8 hours or high 3-4 hours.
- Serve hot and enjoy!
Notes
- Optional: Add zucchini or mushrooms for extra nutrition.
- For a spicier version, add jalapeños or use spicy taco seasoning.
- This dish can be made ahead and stored in the refrigerator before cooking.
