- 1 lb penne pasta (or preferred pasta)
- 1 lb shrimp, peeled and deveined
- 2 smoked sausages, sliced (or Andouille sausage)
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1½ cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne pepper (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook penne pasta according to package instructions. Drain and set aside.
- Heat 1 tbsp olive oil in a skillet over medium heat. Cook sausage slices until browned and slightly crispy. Remove and set aside.
- In the same skillet, heat remaining olive oil. Season shrimp with paprika, garlic powder, onion powder, salt, and pepper. Cook 2–3 minutes per side until pink and fully cooked. Remove and set aside.
- Sauté bell peppers, onion, and garlic in the skillet until softened, about 4–5 minutes.
- Add heavy cream and bring to a simmer. Stir in mozzarella and Parmesan until smooth and creamy. Adjust seasoning with salt and pepper.
- Add cooked pasta, shrimp, and sausage to the skillet. Toss to coat evenly in the sauce. Heat through for a few minutes.
- Serve garnished with fresh parsley and extra Parmesan if desired.
Notes
- Optional: Add other vegetables such as zucchini or mushrooms for extra flavor.
- For a spicier version, increase the cayenne pepper or use spicy Andouille sausage.
