  • 2 medium sweet potatoes, cubed (about 2 cups)
  • 2 tbsp olive oil
  • 1/2 cup buffalo sauce
  • 2 cups fresh broccoli florets
  • 1 tbsp honey (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cube sweet potatoes and cut broccoli into florets. Toss with olive oil, salt, and pepper.
  3. Spread sweet potatoes on one half of the sheet and chicken on the other. Drizzle olive oil over both.
  4. Pour buffalo sauce over chicken; mix in honey if desired.
  5. Roast 25–30 minutes until chicken reaches 165°F and sweet potatoes are tender.
  6. Allow to rest and serve. Drizzle extra buffalo sauce over bowls if desired.
