- 1 pound medium shrimp, fresh or thawed frozen
- 8 ounces pasta (penne, ziti, or rigatoni)
- 4 cloves garlic, minced
- 4 tablespoons butter
- 1 tablespoon freshly squeezed lemon juice
- 1 cup heavy cream or coconut cream
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon red pepper flakes (optional)
- Spinach (optional)
- Mushrooms (optional)
- Bell peppers (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Cook pasta according to package instructions until al dente and set aside.
- Melt butter in a large skillet over medium heat, add garlic and sauté for 1-2 minutes.
- Add shrimp to the skillet and cook for 3-4 minutes until pink and opaque.
- Stir in lemon juice, heavy cream, and chicken broth. Simmer 2-3 minutes until slightly thickened.
- Mix cooked pasta with shrimp mixture and any optional ingredients.
- Transfer to a greased baking dish and spread evenly.
- Sprinkle mozzarella and Parmesan cheese on top.
- Bake for 20-25 minutes until cheese is bubbly and lightly golden.
- Let rest a few minutes, then serve warm.
