  • ¾ cup unsalted pistachios, finely chopped
  • 2 tbsp fresh thyme leaves, minced
  • ½ tsp sea salt
  • 2 tbsp honey
  • 1 tsp fresh lemon juice
  • 1 tsp Dijon mustard
  • Freshly ground black pepper, to taste
  • Egg wash: 1 egg + 1 tbsp water

Instructions

  1. Preparing the Brie & Puff Pastry: Cut brie wheel into 12 equal cubes (~1½ inches each). Pat dry. Roll out puff pastry and cut into squares large enough to wrap each brie cube.
  2. Making the Pistachio Crust: Combine chopped pistachios, minced thyme, and sea salt in a shallow bowl. Brush pastry with egg wash and coat edges with pistachio mixture.
  3. Assembling & Baking: Place brie on puff pastry squares, fold pastry around brie, brush with remaining egg wash, and sprinkle extra pistachios if desired. Bake at 400°F (200°C) for 20–25 minutes until golden and puffed. Let rest 3–4 minutes before serving. Sprinkle with black pepper and drizzle honey if desired.
