- 12 oz (340 g) wheel of brie, cut into 12 equal cubes
- 1 sheet frozen puff pastry, thawed
- ¾ cup unsalted pistachios, finely chopped
- 2 tbsp fresh thyme leaves, minced
- ½ tsp sea salt
- 2 tbsp honey
- 1 tsp fresh lemon juice
- 1 tsp Dijon mustard
- Freshly ground black pepper, to taste
- Egg wash: 1 egg + 1 tbsp water
Instructions
- Preparing the Brie & Puff Pastry: Cut brie wheel into 12 equal cubes (~1½ inches each). Pat dry. Roll out puff pastry and cut into squares large enough to wrap each brie cube.
- Making the Pistachio Crust: Combine chopped pistachios, minced thyme, and sea salt in a shallow bowl. Brush pastry with egg wash and coat edges with pistachio mixture.
- Assembling & Baking: Place brie on puff pastry squares, fold pastry around brie, brush with remaining egg wash, and sprinkle extra pistachios if desired. Bake at 400°F (200°C) for 20–25 minutes until golden and puffed. Let rest 3–4 minutes before serving. Sprinkle with black pepper and drizzle honey if desired.
Notes
- Make ahead friendly and freezer safe up to 3 months. Reheat in the oven for a few minutes to crisp again.
