- 1 lb sausage (Italian, chicken, or plant-based)
- 2 medium sweet potatoes, peeled and cubed into 1-inch pieces
- 1/4 cup honey or maple syrup for vegan option
- 3 cloves garlic, minced
- 2 tbsp soy sauce (use tamari for gluten-free)
- 2 tbsp olive oil or neutral oil
- 1 tsp paprika (smoked recommended)
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped, for garnish
Instructions
- Peel and cube sweet potatoes; mince garlic.
- Heat oil in skillet over medium heat. Slice sausage if needed, cook 5–7 min until browned.
- Add sweet potatoes, cook 5 min stirring occasionally.
- Whisk honey, garlic, soy sauce, paprika, salt, and pepper; pour over sausage and sweet potatoes.
- Cover skillet, simmer 10–12 min until sweet potatoes are tender, stirring halfway.
- Garnish with parsley and serve hot.
Notes
- Store leftovers up to 4 days; reheat over medium-low heat 5–7 min until 165°F.
- Customize with different sausage varieties or add red pepper flakes for heat.
