Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 1 large egg yolk
  • ¼ cup granulated sugar
  • ⅛ tsp salt
  • ¼ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and brown sugar until light and fluffy.
  3. Mix in egg yolk and vanilla extract.
  4. Whisk flour and cocoa powder, gradually add to wet ingredients.
  5. Add red food coloring and mix until even.
  6. Roll dough into 1-inch balls, coat in sugar, place 2 inches apart, and make indentation in center.
  7. Beat cream cheese, egg yolk, sugar, salt, and vanilla for filling.
  8. Fill cookie centers with cream cheese mixture and bake 12-14 minutes until edges are set.
  9. Cool on baking sheets for a few minutes, then transfer to wire rack.
