- 4 cups bok choy, chopped (about 1 pound)
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced

- 1 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 2 green onions, sliced for garnish
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add ground meat and cook until browned, breaking apart with a spatula, 5-7 minutes.
- Stir in garlic and ginger; cook 1-2 minutes until fragrant.
- Add chopped bok choy and stir-fry 3-4 minutes until wilted.
- Pour in soy sauce, oyster sauce, sesame oil, and red pepper flakes (if using); stir to combine.
- Season with salt and pepper, cook 1-2 more minutes until heated through.
- Remove from heat and garnish with sliced green onions before serving.
Notes
- Vegetarian option: substitute ground meat with crumbled tofu or tempeh.
- Add a splash of rice vinegar for tang or toss in bell peppers for color and crunch.
